Today marks the beginning of a week long celebration of the chocolate chip cookie! Today until March 20th is National Chocolate Chip Cookie Week!! Usually foods or drinks get days, but this cookie is such a staple and so important that it gets an entire week! Celebrate the week with the below chocolate chip cookie recipe from my mom!
Mom’s Chocolate Chip Cookies:
1/2 cup butter, softened
1/2 cup shortening or crisco
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups flour
1 teaspoon vanilla
1 cup roughly chopped toasted walnuts or pecans
1 12-oz bag of chocolate chips
Cream butter, shortening, and sugars until light and fluffy
Add eggs, one at a time
Add baking soda, salt, and flour in 3-4 additions
Add vanilla
Stir in nuts and chocolate chips
Chill dough for 30 minutes (don’t skip this step! I think it makes for the best cookies!)
Preheat oven to 350 degrees
Drop by rounded teaspoons onto a parchment lined cookie sheet
Bake for 12-14 minutes
Cool on wire racks
