Meatless Monday: Kalettes

My new favorite veggie that I can’t stop roasting is kalettes.  If you haven’t heard of 2015’s favorite veggie, it is a mix between kale and brussels sprouts, and tastes just like them.  The outer leaves taste just like crisp kale and the inner “heart” tastes just like a meaty brussels sprout.  Kalettes, are the brain-child of the British vegetable seed house Tozer Seeds, and took 15 years to perfect.  The veggie is non-GMO and was developed through traditional hybridization and not genetic modification.  Read and follow the below roasting recipe for the perfect side dish to serve at your St. Patrick’s Day festivity! 1/2 bunch of kale Bag of kalettes 2 Cups brussels sprouts Olive Oil and Olive Oil Spray Salt, Pepper, and other spices of choice (I used turmeric) Preheat oven to 375 Rip kale from stems Clean and cut brussels sprouts in 1/2 Lay kalettes, and brussels sprouts on tin foil line rimmed baking dish Drizzle olive oil over kalettes and brussels sprouts Sprinkle seasoning on kalettes and brussels sprouts and toss with hands …

Meatless Monday: Twice Baked Stuffed Sweet Potato

This week’s posts are all about time saving!  I picked 9 of my most-used ingredients and made 5 meals from those ingredients, including Meatless Monday, a quick breakfast for Tuesday, a main dish, a smoothie, and a dessert.  I prepped everything in one day, which meant during the week I only had to spend 2-15 minutes putting together the meals.  The only recipe that took longer than that is Wednesday’s because of the cooking time of the chicken.  I also tried to use the ingredients in at least two meals, and again the only ingredient that wasn’t used twice was the chicken.  I hope you give this 9 ingredients, 5 recipes a try. Meatless Monday: Brussels Sprout Ginger Slaw

Today’s recipe was first served as a side dish at my family’s dinner party over the holiday season.  It was a festive dish with the red and green color, but light, refreshing, and healthy for the holiday season.  I have made it numerous times since the holidays, thus becoming a staple slaw or salad in my kitchen.  You can serve as a side dish, or top with grilled shrimp, chicken, or white fish.  I hope you enjoy this recipe as much as I do! 1/2 Cup plus 2 TBSP Nonfat Plain Greek Yogurt 1/2 Cup EVOO 3 TBSP Raw Unfiltered Apple Cider Vinegar 1 TBSP Honey 2 TBSP Very Finely Grated Peeled Fresh Ginger 1/2 Pound Brussels Sprouts, Finely Shredded 1 Head Radicchio, chopped Seeds of 1 Pomegranate Salt and Pepper (2 pinches of each) In a small bowl, whisk the yogurt with olive oil, vinegar, ginger, honey salt, and pepper In a large bowl, combine brussels sprouts and chopped radicchio Pour dressing on veggies and toss to coat Season with salt and pepper Let sit …

Meatless Monday: Super Bowl Appetizers!

The 49th Super Bowl is this Sunday, with the Seattle Seahawks pitted against the New England Patriots.  But, more important than the game, than the commercials, is what you serve at your party!  (or take to someone’s party!)  Today are a few vegetarian appetizers to go with the spirit of typical Super Bowl party eats…one has buffalo sauce and the other is chips, but both are a healthier versions!  Follow the directions below for buffalo cauliflower steaks and my version of sweets and beets–sweet potato and beet chips! Sriracha Buffalo Cauliflower Steaks: 1 head of cauliflower 1/4 Cup Sriracha Sauce 6 TBSP Butter 1/8 Cup White Vinegar In a saucepan on the stove, melt and stir ingredients until butter is completely melted Preheat oven to 375 Chop cauliflower into chunks and put in bowl Pour Sriracha buffalo sauce over cauliflower and mix until chunks are coated Pour into oven safe dish sprayed with cooking spray and bake in over for 30-40 minutes, or until the cauliflower is just starting to brown Place on serving dish and serve …

Meatless Monday: Raw Chocolate Fudge

I realized that I have never posted a dessert Meatless Monday, so today’s recipe is just that!  I have made this recipe multiple times since first finding it on Oh She Glows.  Even my trainer (YES my trainer!) begs me to make these.  Follow the recipe below for a raw chocolate and walnut fudge. 1/2 cup virgin coconut oil 1/4 cup raw almond butter (or nut butter of choice) 1/2 cup cocoa powder (or raw cacao powder) 1/2 cup pure maple syrup (or agave nectar) 1 tablespoon pure vanilla extract pinch fine grain sea salt, to taste 3/4 cup raw walnuts, roughly chopped With electric beaters, beat together the coconut oil and almond butter Sift in the cocoa powder and beat again until combined Pour in the maple syrup, vanilla, and salt and beat until smooth Stir in the walnuts Line a loaf pan with a piece of parchment paper Scoop the chocolate mixture into the pan and spread out until even I took another handful of walnuts, broke them up, and sprinkled over the top of …

Meatless Monday-Beet Kale Roll-Ups

I love beet and goat cheese salads and ever since dining at M.A.K.E. in Santa Monica, I have wanted to try to make nut cheezes.  Well, today I combined those to make a beet and cheeze kale roll up!  Follow the directions below for both a cashew pine nut cheeze and my beet kale roll-ups! Meatless Monday-Taco Quinoa

Did everyone stuff themselves yesterday while watching the blowout of a Superbowl?  Well, today’s Meatless Monday will help your body get back into balance.  It is a healthy Meatless Monday recipe with veggies, and lots of flavors.  It is my Taco Quinoa recipe!  Follow the instructions below and enjoy a healthy meal today! 1 Cup Uncooked Quinoa 1 Taco Packet 1/4 Onion 3/4 Cup Green Beans 1/2 Cup Corn 1/2 Cup Tomatoes, diced 1/2 Cup Pepper, diced 1/2 Cup Shelled Edamame (not pictured below) Lettuce Cups (or tortillas if you prefer) Avocado, Black Beans, and Olives for topping Over a medium-high skillet on stove, add quinoa to toast for approximately 2 minutes Add water (according to package) Once water is boiling, stir in taco packet Once water is cooked off, add any frozen veggies you are using Once the veggies are almost cooked through, add the rest of your veggies Once veggies are cooked through, spoon mixture into lettuce cups or onto tortilla Top with avocado, black beans, and olives, or other toppings of choice My …

Meatless Monday-Brick Bread

If you have a family or friends who like nuts and seeds as much as my family, you are going to love today’s recipe!  Some of my friends used to call me a bird in college because when I went on road trips, I would always bring baggies of nuts.  And, in my apartment I always have a bowl of nuts for snacking.  This recipe is a deliciously dense super seed bread from the Associated Press.
