Meatless Monday: Brussels Sprout Ginger Slaw

Today’s recipe was first served as a side dish at my family’s dinner party over the holiday season.  It was a festive dish with the red and green color, but light, refreshing, and healthy for the holiday season.  I have made it numerous times since the holidays, thus becoming a staple slaw or salad in my kitchen.  You can serve as a side dish, or top with grilled shrimp, chicken, or white fish.  I hope you enjoy this recipe as much as I do! 1/2 Cup plus 2 TBSP Nonfat Plain Greek Yogurt 1/2 Cup EVOO 3 TBSP Raw Unfiltered Apple Cider Vinegar 1 TBSP Honey 2 TBSP Very Finely Grated Peeled Fresh Ginger 1/2 Pound Brussels Sprouts, Finely Shredded 1 Head Radicchio, chopped Seeds of 1 Pomegranate Salt and Pepper (2 pinches of each) In a small bowl, whisk the yogurt with olive oil, vinegar, ginger, honey salt, and pepper In a large bowl, combine brussels sprouts and chopped radicchio Pour dressing on veggies and toss to coat Season with salt and pepper Let sit …

Home for the Holidays-Char’s Restaurant

While I was home for the holidays, my parents took me to one of their new favorite restaurants in Harrisburg, PA, Char’s Restaurant.  The Restaurant is housed in the Tracy Mansion, which was built in 1913, and is the only restaurant in Harrisburg that is situated on the Susquehanna River.  You can enjoy a pre-dinner drink in the library or at the bar, and while dining enjoy a view of the Susquehanna River and the amazing glass and sculptures by artists Ona Magaro (Char’s daughter) and Glenn Zwyegardt.  Owner Char Magaro and Executive Chef Ron Canady make an amazing team, and provide for one memorable meal. Meatless Monday-Applesauce Salad

Hope everyone had a great weekend!  I wanted to share with you one of my favorite salad recipes.  Both the salad recipe and the dressing recipe have only a few ingredients and are very easy!  Follow the directions below and enjoy! Dressing: 3/4 Cup Unsweetened Applesauce 1/4 Cup Apple Cider Vinegar 1 TBSP Dijon Mustard 1/3 Cup Olive Oil Salt & Pepper to taste Process all ingredients except oil in blender or food processor until smooth With motor running, add oil in a thin steady stream Dressing may be kept in a covered container in the refrigerator for up to one week Whisk before using Salad: 8 cups of desired torn lettuce and/or spinach 1/2 Cup toasted, chopped nuts (pecans, walnuts, pistachios, almonds,pine nuts) 3 oz crumbled blue cheese 2 sliced golden delicious apples Toss together all ingredients and 1/2 cup of the vinaigrette Salad to serve 6-8 If you want a more summery salad, you can substitute strawberries for the apples or even berries!  And you can serve as the main dish, or you …
