Today is a combination of one of two of my favorite days…thirsty Thursday and World Nutella Day!!! No, I didn’t combine the two for today’s recipes, but I did bring a no-bake Nutella Fudge recipe to the blog and a bunch of delicious Valentine’s Day cocktails! You should even put the Nutella Fudge on the menu for your Valentine’s Day because it will surely be a hit it your Valentine likes Nutella!
Nutella Fudge:
1/2 cup virgin coconut oil
1/4 cup Nutella
1/2 cup cocoa powder (or raw cacao powder)
1/4 cup pure maple syrup (or agave nectar)
1/4 honey
1 tablespoon pure vanilla extract
pinch fine grain sea salt, to taste
3/4 cup raw hazelnuts, roughly chopped; 1/4 for garnish on top, the rest to be stirred into fudge
(previous recipe using almond butter and walnuts HERE)
Place all ingredients in a bowl and stir until combined
Line a meatloaf pan with wax paper and pour fudge into pan
Top with leftover hazelnuts
Place in freezer for about an hour until fudge hardens
Slice and enjoy! If you aren’t serving all of the fudge, or are giving as gifts, make sure you keep in freezer and tell the recipients to keep in freezer!

Now for the drink portion of today’s post. These first four recipes are Valentine’s Day themed for lovers, guys, gals, and curmudgeons (vocab word of the day! defined as a bad-tempered or surly person!)
For Lovers:
You will instantly fall in love with the Passion Margarita
In a shaker, combine 1.5 oz. 100% blue agave blanco tequila, 1.5 oz. Powell & Mahoney Mango Passion Margarita, 0.5 oz. almond syrup, 2 dashes Angostura bitters and the juice of half a lime
For guys:
Celebrate your singlehood with your buddies with a batch of Spicy Snapper
Pour 4 oz. Powell & Mahoney‘s award-winning Sriracha Bloody Mary mix, ½ oz. fresh lemon juice and 1 ½ oz. gin in a shaker and gently shake
Strain into a pint glass filled with ice and garnish with a lemon wedge and celery leaves
For gals:
What better way to celebrate than with the original girl’s night cocktail: the Cosmopolitan? It’s so much better to be pink than blue with the Cosmo Berry Spritz in hand!
Mix 2 oz. Powell & Mahoney Cosmopolitan mix, 1 medium strawberry and 3 oz. dry white wine in a shaker. Muddle strawberry and gently shake. Strain all ingredients into a wine glass filled with ice and stop with a splash of soda and garnish with an orange wheel.
For the love curmudgeon: If you’re just down on love for the time being and aren’t puckering up for anyone this V-Day, feel free to express your bitterness with The Sour cocktail.
Pour 1 ½ – 2 oz. spirit of choice and 1 oz. Powell & Mahoney Lemon Sour mixer into a shaker and gently shake
Strain into a chilled martini glass and garnish with a lemon twist
These next two cocktails are perfect to serve at your Valentine’s Day Dinner at home. Very similar, but both yummy and fizzy!
Ingredients:
For the simple syrup:
1 cup Bare Mixer’s Pomegranate Cranberry Cosmo
1/2 cup agave
For each Bellini:
1 ounce of simple syrup
3 to 4 ounces Prosecco/Champagne
Squeeze of fresh lime juice
Whole cranberries and slices of lime for garnish
Directions:
To make simple syrup
In a small pot, stir together Bare Mixer and agave
Set pot over medium-high heat and bring to a boil
Turn to low and simmer for 5 minutes, stirring until agave completely dissolves
Pour syrup in a jar, cool completely, and store in refrigerator until ready to use
To make a Bellini:
Pour 1 ounce of cranberry-pomegranate simple syrup into a champagne flute
Top with 3 to 4 ounces of Prosecco
Squeeze a wedge of lime into the Bellini
For a garnish, use a toothpick to skewer a whole cranberry and half slice of lime, if desired
Bare Pomegranate-Cranberry Sparkler:
Ingredients:
2 cups Bare Pomegranate-Cranberry Cosmo
Orange Simple Syrup (see below)
Juice of one large orange
Chilled Prosecco/Champagne
Pomegranate seeds for garnish
For orange simple syrup:
1 orange, peeled
1/2 cup agave
1 cup water
Directions:
Using a veggie peeler, peel orange rind in long strips and set aside
In a small saucepan, combine orange rind, agave, and water
Bring to a boil over medium-low heat and stir with a wooden spoon until sugar is dissolved
Remove from heat and allow syrup to cool completely
Remove orange rind and discard
Chill simple syrup until you are ready to use it
To assemble the sparkler:
In a pitcher, combine orange simple syrup, Bare Pomegranate-Cranberry Cosmo, and orange juice
Stir to combine and chill until ready to serve
To serve cocktails, add a few pomegranate seeds to each champagne flute
Fill flutes 1/3 of the way with the juice mixture
Top with champagne
